Why fleece pile flattens
Fleece pile is what holds the warmth, and heat is what destroys it. The raised fibers on the inside face trap a layer of still air against you. Run that through a hot dryer and the fibers mat together into a flat sheet, and an old fleece feels thin for exactly that reason.
Cold water and air drying keep the pile standing. It costs you an afternoon and buys years.

At size M it runs 73 cm long with a 58 cm shoulder and a 62 cm chest laid flat, so 124 cm around. A 124 cm chest against a 73 cm body is cut deliberately boxy. It is built to fall into at the end of a day, not to be seen in.
Fabric is 355 gsm fleece at 42% cotton, 53% polyester and 5% other fiber. The cotton is what stops it feeling plasticky against skin. Sizes run S to 2XL and it carries a full size chart. Keep the wash cold and hang it dry.

Why does an old fleece feel thin?
The pile has matted. Heat from a dryer welds the raised fibers into a flat sheet, and the trapped air that did the insulating is gone.
How heavy is 355 gsm?
Heavy. Most fleece sits between 200 gsm and 300 gsm, so this holds more air and keeps its shape instead of draping.
